I have also seen a couple of Carnivals that seem to have stopped publishing altogether. Is it possible to get some of the few that are no longer publishing removed from the site?

Try going to their homepage and see when the latest carnival post was - they could have stopped altogether.

I've been using the Blogger Carnivals site and recording my submissions, including the hosting site. But when I go to check out those sites, a lot of them don't seem to have any carnival post at all. I'm still new to this process, so I could very easily be getting something wrong here. It just seems a little weird to me.
