Thanks to Jason at Live Real Now, I was able to find out how a little about getting Credit Wise Info to stop stealing my posts:
I submitted a complaint ticket to Host Gator via this link: http://www.hostgator.com/dmca.php
I received an email from Host Gator saying that Credit Wise Info took down the offending material. Since I hope that does the trick but I am not 100% sure it will, I will monitor my spam folder for more Credit Wise Info rip-offs. I’d suggest that everybody who is annoyed by them file a ticket. Either Host Gator will shut them down or they will at least be forced to stop ripping off those who take the time to complain. The complaint ticket only takes a few minutes to fill out and having to do it once or twice may be the key to getting to keep our content to ourselves.

I've been annoyed with them as well. They truly stink. I'll do the same thing as you did, and hopefully this will have a similar impact.

Good job Crystal… I know the they ripped off one of the round ups you did because I was included, and they also ripped off a round up that Barb Friedberg did… it seemed suspicious when "the" was replaced each time with "a" on their posts. Im new so I didnt want to call them out until I knew for sure.

If this link doesn't work http://www.hostgator.com/dmca.php (I can click it but Squirrelers can't), you can also go to Host Gator and search for DMCA complaint. Or contact their chat or phone support and they'll hook you up too. They are very helpful! Or write them a quick regular email about it (like I did) and they'll send you back a long letter on why you have to use the official complaint form and it will have a link. :-)

I get a lot of pingbacks from them when they rip off other people's carnivals but I ignore. What you can do is put affiliate links in your posts and internal links so if they do rip you off then there's a side benefit to it as well.

Yeah, great idea, I always put at least 1 link to another page on my site in each article, just so when my content gets spread around the web, there's a link back to me.
The problem with affiliate links, is that most programs don't allow your affiliate links to be placed on unapproved URLs, so if somebody steals your content and post it with your affiliate links included on another URL, the affiliate programs can demand you remove it or remove you from their program for doing so. I've had these issues in the past.
Honestly, I'm tried hunting down so many content stealers, and it usually just takes lots of time with little results. I don't even know if it's worth it, but I'll usually just send a legal-type email demanding they stop or face lawsuits and leave it at that.
It looks like you found a way to stop them here, so that's good.

How do I figure out who hosts a site? And how do I contact them? The best I can find is hosted by: SourceDNS but I can't figure out how to contact that company.

They have a dedicated box. The information isn't listed on the whois, but an IP check reveals that it traces back to http://www.liquidweb.com/ Send that company an email, tell them they are ripping off your content (they have a whole network of ripped content, it appears), and they'll take care of it.
If anyone needs help in getting bums off their content, let me know. Nothing I hate more than pure and simple theft.
