Go to the main post-login screen where it lists your sites. Click "edit" off to the right for the site, then go to "Filters applied to profile" and to the right is a "+ Add Filter" link. Piece of cake from there.

When I click on the Analyticator settings, there is a heading "advanced settings"…they have "user roles not to track" listed… i simply click on administrator.
