I just discovered PicMonkey and love it :) Any other cool image editing resources that you guys would recommend?

If color or lighting is off, I well run an image through Picasa. For cropping, resizing, and saving for web, I just use gimp with the save for web plugin.

I was a huge fan of Picnik before Google bought them out. For now, I just use Pixlr.com unless I have heavy duty image editing – in which case I use Photoshop at the library.

I've outsourced my image editing to a Photoshop expert – who is also known as my girlfriend. Best work I've ever seen ;)

Stephanie – the images on your post look great! Very pinnable. :)
I also like PicMonkey. I got a little addicted when I first found it and even went back in time to re-create another birth announcement for my 2-year-old just to see if I could do it. I like how you don't have to register, so as soon as you load the page, you can immediately load up a photo and start editing.
I was also a huge Picnik fan, but I think PicMonkey is just as good, if not better in some ways.
I've used a few PicMonkey-generated images in recent posts. A friend of mine really gets into it on her blog (she inspired me to start using it). Here are a few of mine. I'm not as advanced as she is, but I'm getting there.

The majority of my visuals on my site are personal photos and drawings. I do photo editing and draw by hand through GIMP. Absolutely love it.
