I've tried to sign up twice for google ad sense (once when I had just started my blog) and now just again last week. Both times I've been rejected. Is there a certain statistic they are looking for? Am I doing something wrong?

Try contacting Google. I didn't think they had to accept new sites but it could be that your URL used to be on a blacklist.

You could also try alternatives like Media.net or Infolinks.

I joined Adsense in 2010 when I reached a certain number on my youtube videos. Back then you had to achieve a level.  Now anybody can get it.  I would reach out to them as it might be something small.
