Is it acceptable to sign up for a service using your own affiliate links? I've poured over the program details on several of them and I can't find anything that says yay or nay. Thoughts?

Be careful with it – they could ban you if you do it. I doubt if you do it once and are a paying customer afterwards they would, but they can.

I say be cautious about it as well, but my affiliate rep has actually encouraged me to do so as long as I'd be using the product anyway and not going crazy with it.

I don't know why Amazon is so stingy that way… After all, it's still money for them all the same…
I guess the best bet would be to do the legwork (legwork ha, not in these online days huh) and call to make sure.

Read through the Terms & Conditions. Some affiliate merchants explicitly ban it, while other merchants don't mention it. If the program doesn't mention it, then I assume its okay.
