Is there any way to get Wordpress to display the author's "nickname" in a post instead of the the user name? You can't change the username, but I want to change the name shown in the byline for posts that were written under a certain user account.

Not sure if this is what you mean, but I have a staff writer whose name shows up instead of mine when posting the article. I go into the "All Posts" tab, check the box next to their post(s), then go into the "bulk edit" dropdown and change that to "edit" and click "apply". Over to the right will be a dropdown box for author where you can choose the author of the post.

It should be in the user's preferences section. As for changing the author of posts I've only been able to do that in quick edit mode. I don't know why they don't build that into the regular edit mode. But at least it's not something I have to do very often so it's not that big of a deal.
